Strawberry Cupcakes

Recently I was asked by Parker's niece that she wanted me to bake her strawberry cupcakes for her 3rd birthday so when the cutie pie asks, the cutie pie receives.  They actually turned out really yummy but next time I would add a little strawberry extract for more enhanced flavor.


Makes 18 cupcakes

2 1/4 cups all-purpose flour, sifted twice
1 1/2 cups sugar
2 3/4 teaspoons baking powder
1/2 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter, at room temperature
3/4 cup pureed frozen strawberries (if you use fresh strawberries, put them in the freezer first to draw out the moisture and then puree)
4 large egg whites
1/3 cup milk
2-3 drops of red food coloring or gel paste

Garnish (optional):
Fresh strawberries, sliced

1. Preheat oven to 350 degrees.  Line 18 cupcake pan with paper liners.
2. In a medium bowl, whisk together flour, sugar, baking powder and salt; set aside.
3. In a large bowl with electric mixer, blend butter and strawberry puree (this is where I would add about 1/2 teaspoon of strawberry extract)
4. Add dry ingredients (flour mixture) and blend until light and fluffy (batter will be very thick and dry-like)
5. In another bowl, whisk together egg whites, milk and dye.  Add whites in three parts to the batter mixture, mixing only until incorporated after each addition.
6. Fill cupcake liners about 3/4 full.  Bake 18-22 minutes, or until toothpick inserted in center comes out clean.
7. Let cupcakes cool completely before frosting.


Buttercream Pink Frosting: 

2 cups powdered sugar (a 16 oz. box)
1 stick unsalted butter (1/2 cup)
1 teaspoon vanilla bean paste or extract
1 to 2 Tablespoons milk
1 to 2 drops of red food coloring

1. In a large bowl with electric mixer or hand mixer, cream together butter and sugar on low speed.  Mix until well blended increasing speedy to medium and beat for another couple of minutes.
2. Add vanilla and milk and continue to beat on medium speed for another minute or more, adding more milk if needed for desired spreading/piping consistency.
3.  Once cupcakes have completely cooled you may spread frosting on them or use a piping bag and pipe the frosting on the cupcakes.  Top with sliced strawberry or sprinkles for decoration.


As you can see the Birthday girl very much enjoyed her specially requested Strawberry cupcakes.
