Avocado Coconut Ice Cream

This ice cream is very unique, quite interesting but somehow delicious.  And if you are going to have ice cream might as well have this one since avocado is full of "good" fat.  At least that's what I tell myself.  You will need to make this recipe the day before you plan to enjoy it.

Serves 8

1 1/2 cups whole milk
1 cup coconut cream or cream of coconut (in the can)
1/2 cup white sugar
2 ripe avocados, peeled and pitted
3/4 teaspoon lemon juice
1/4 -1/2 cup sweetened shredded coconut, lightly toasted

1. Puree milk, coconut cream, sugar, avocados and lemon juice in food processor or blender until smooth.
2. Pour into a bowl, cover, and refrigerate for several hours until cold.
3. Freeze in ice cream machine according to manufacturer's directions, then freeze overnight.
4. Serve with the toasted shredded coconut.
