Sweet Peach Cake

I saw this on Giada De Laurentiis show on Food Network recently and thought it sounded really good. After reading several reviews on the cake I decided to make some changes and the cake came out really delicious.

Ingredients: 

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2/3 cup coconut oil or vegetable oil 
  • 1/4 cup sour cream 
  • 3 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 23 oz. can of sliced peaches in 100% syrup, chopped
  • 3 teaspoons of syrup from the peaches
1. Preheat oven to 325 degrees.  Spray an 8x8 or 7x10 glass baking dish.  
2. Whisk the flour, baking soda, salt, baking powder and cinnamon in a medium bowl until blended.  Beat the sugar, oil, eggs and vanilla in a separate large bowl to blend.  Stir in the chopped peaches and syrup.  
3. Gradually add the dry ingredients and stir until blended.  Pour the batter into the prepared baking dish. Bake until a tester inserted into the center of the loaf and comes out with no crumbs attached, about 1 hour.  Transfer the pan to a wire rack and cool for 15 minutes. Remove the loaf from pan and cool completely, about 1 hour. 

Frosting ingredients: 
  • 1/2 stick unsalted butter, at room temperature
  • 1/4 cup whipping cream
  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar
1. Beat the butter, cream and vanilla in a large bowl, using an electric mixer on medium speed until light and fluffy.  Gradually beat in the powdered sugar until light and creamy adding milk as needed for thinning.  
2. Spread frosting over the top of the cooled loaf and allow to set for 20 minutes. 
3. Cut the loaf into slices and serve.
