Cheese Stuffed Burger with Parmesan Crisp and Summer Corn Salad

Sunday dinner was delicious....will become a regular this summer.

Serves  4 

Burger Ingredients:

  • 1 lb. ground Beef 
  • splash worcestershire sauce
  • splash fish sauce
  • salt and pepper, to taste
  • 1/2 onion, diced
  • 4, 1 inch pieces of extra sharp cheddar cheese
1.  Mix all burger ingredients lightly and form into patties. Place 1 inch piece of sharp white cheddar cheese inside the burger. 
2. Heat grill or grill pan on high heat. Add burgers and cook until done on both sides.
3. Served with parmesan crisp and homemade guacamole.  I served mine open faced on naan bread since that was all I had in the house. 

Parmesan Crisps: 
Place 1 tablespoon of shredded parmesan cheese on a Silpat mat or Parchment paper on a cookie sheet and bake at 350 for about 12-15 minutes or until light brown.  I sprinkled the cheese before baking with garlic powder, onion powder and black pepper. 

Guacamole: 
  • 2 avocados, chopped and mashed
  • 1 jalapeno pepper, chopped (seeded if you don't like a lot of heat) 
  • grape tomatoes, chopped
  • lime juice to taste
  • fresh cilantro, chopped
  • dash of cumin
  • dash of seasoned salt
Mix all ingredients together in bowl and serve with the burger. 

Summer Corn Salad Ingredients:
  • 4 ears of corn
  • green onions, chopped
  • feta cheese
  • 1/2 orange bell pepper, chopped
  • fresh lemon juice to taste
  • salt & pepper
  • pepperoncini peppers, chopped 
1.  Bring a large pot of water to a boil.  Add corn and cook for 5 minutes or so until tender.  
2.  Cut kernels off of cobs and add to a bowl.  
3.  Add all ingredients to corn and mix well.  Serve as a side with the burger.  * This corn salad tastes much better the next day when the flavors have blended more.
