Lemony Mixed Green Salad with Chicken Sausage

Tonight I decided to make a nice big salad that was not only delicious but full of vegetables and flavors.  We loved this salad which was very satisfying & filling.  You can easily substitute the sausage for grilled chicken breast, steak or if just keep it vegetarian if you'd like.  Also you can add any vegetables you'd like to this salad such as roasted broccoli, roasted asparagus, hard boiled egg or even roasted red peppers.  Sorry I forgot to take a picture.

Serves 2

Salad
Romaine lettuce, chopped
Baby Spinach, chopped
Arugula, chopped
Tomatoes, chopped (I roasted some the other night in olive oil, salt & pepper)
Mushrooms, sliced (sauteed in olive oil, salt & pepper for a few minutes then add a splash or two of Marsala wine; cook until liquid has evaporated)
2 Yellow Beets (boiled until tender, peeled and chopped) - of course optional but they give a good sweetness to the salad
2 Green onions, chopped
Pepperoncini, chopped
Feta cheese, crumbled
2 Chicken Sausages (I love Amylu's Apple & Gouda Cheese Sausages from Costco), grilled and sliced

Lemon Vinaigrette
4 Tablespoons Grapeseed oil
1 Teaspoon dijon mustard
1 Meyer lemon, squeeze
2 cloves garlic, minced
salt & pepper

1.  Assemble salad ingredients.
2. Toss with Lemon Vinaigrette and serve
