Red Velvet Whoopie Pies

I was all set to make some red velvet cupcakes yesterday morning and totally made these by accident.  They actually turned out really delicious and are likely going to be my new favorite thing!

1 1/2 cups all-purpose flour, sifted
1 cup white sugar
1/2 Tablespoon cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 Tablespoon red food coloring
1/2 teaspoon vanilla bean paste or extract
3/4 cup vegetable oil
2 Tablespoons buttermilk powder (or 1/4 cup buttermilk)
1 teaspoon white distilled vinegar

1.  Preheat oven to 350 degrees.  Grease a cookie sheet with cooking spray (You can also use a Silpat instead of greasing the pan).
2.  Sift the flour, sugar, baking soda, cocoa and salt into a bowl. 
3.  Beat egg, oil, buttermilk powder, food coloring, vanilla and vinegar in a bowl with an electric mixer until combined.
4.  Add dry ingredients and beat until smooth, about 1 minute. Batter should be thick like cookie dough.
5.  Drop about a spoonful of batter, roll it up and lightly press it on the cookie sheet. Bake cookies about 10-12 minutes or until a toothpick inserted in the center comes out clean.
6.  Let cookies cool for 5 minutes, then transfer each onto a wire rack and cool completely. 

Cream Cheese Frosting:  
A half of an 8 ounce cream cheese, softened (4 ounces total)
2 tablespoons of unsalted butter, softened
1/2 teaspoon vanilla bean paste or extract
8 ounces (about 2 cups) of powdered sugar

Mix cream cheese, butter and vanilla until well blended and then add powdered sugar gradually and beat for about 3 minutes or until you get a spreading consistency.  If it's too thick you may add a little milk to thin it out a bit but be careful not to add too much. If it is too thin, add a little powdered sugar.

Put frosting in between 2 cookies like a sandwich.
