Chicken Marsala w/ Potatoes & Rainbow Chard

Here is a delicious and easy dish that you can get on the dinner table in less than 30 minutes. 

Serves 2
Ingredients: 
4 Tablespoons butter
2 Chicken Breasts, butterflied and pounded slightly
1/4 cup flour
salt & pepper
1/2 cup Marsala wine

1. Add butter to a saucepan on medium/high heat. 
2. Salt & pepper chicken breasts on both sides. 
3. Dredge chicken breasts lightly in flour on both sides. 
4. Add to saucepan and cook for 4 minutes, flip and cook for 2 minutes. 
5. Add marsala wine and reduce for 2-3 minutes. 
6. Serve with mashed potatoes, pan drippings and sauteed rainbow chard.
