Fresh English Pea Soup
I have never bought fresh English peas before but I saw them this past weekend at Costco and decided to give them a try hence my inspiration for this recipe. It was sweet and delicious!
Serves 4
1. Melt butter and olive oil in a sauce pan over medium heat.
2. Cook shallots for three minutes.
3. Add the water, chicken broth, peas, season with salt & pepper (to taste).
4. Bring to a boil then reduce heat to low, cover and simmer until peas are tender, 12 to 15 minutes.
5. Puree the peas with an emulsion blender. Add basil, salt and pepper to taste. Serve with sliced mozzarella.

- 2 Tablespoons unsalted butter
- 1 Tablespoon olive oil
- 2 shallots, finely diced
- 3 cups fresh english peas, about 1 lb. (you could use frozen peas but make sure they are de-frosted)
- 2 cups water
- 1 cup chicken broth
- 1 Tablespoon basil, chopped finely
- salt & pepper, to taste
- fresh mozzarella cheese, sliced thinly (optional)
