Breakfast Bars (Gluten Free)

So this weekend my friend, Liz, had these wonderful breakfast bars and I had to make them right away. They are delicious and healthy too!  Such a good snack or a great breakfast on the go.


Adapted Recipe from Elana's Pantry
Makes 12 bars

1 ¼ cup blanched almond flour (best to purchase in bulk section at Whole Foods)
1/4 teaspoon sea or kosher salt
1/4 teaspoon baking soda
1/4 cup grapeseed oil
1/4 cup agave nectar
1 teaspoon vanilla bean paste or extract
1/2 cup shredded unsweetened coconut flakes
1/4 cup pepitas (pumpkin) seeds
1/4 cup almond slivers
1/4 cup dried cherries
1/4 cup cranberries

1. In a small bowl, combine almond flour, salt and baking soda
2. In a large bowl, combine grapeseed oil, agave and vanilla
3. Stir dry ingredients into wet
4. Mix in coconut, pepitas seeds, almond slivers, cherries and cranberries
5. Grease an 8x8 baking dish with grapeseed oil
6. Press the dough into the baking dish, wetting your hands with water to help pat the dough down evenly.
7. Bake at 350° for about 25 minutes and serve.

Please note you could use other nuts, seeds or dried fruits.
