Shrimp Scampi w/ Linguine Pasta
So after being off carbs for a while and losing about 15 lbs. I decided it was time to incorporate some pasta back in my life. I actually was craving shrimp and wanted to cook something quick tonight when I got home from work. This recipe is super easy, only has a few ingredients and anyone can make it.
Serves 2
1/2 lb. or 1/2 package of linguine pasta
3/4 lb. of raw shrimp (unshelled and no tails - I like to use large shrimp)
1/2 onion, chopped
2 cloves garlic, chopped
1/2 cup white wine
Texas Pete (or other hot sauce)
olive oil
1-2 tablespoons butter
grape tomatoes
salt & pepper
Juice from 1 lemon
Fresh parsley, chopped
Freshly grated parmesan cheese
1. Bring a large pot of water to boil, add pasta. Cook for 10 minutes or until al dente.
2. In a large saucepan over medium-high heat add some olive oil and butter to pan.
3. Add onions and garlic and cook for a few minutes until soft.
4. Add shrimp and white wine and cook for 2-3 minutes. DO NOT overcook the shrimp. You should cook it until they turn pink.
5. Add tomatoes, pepper, salt, a couple of dashes of hot sauce, parsley and juice from 1 lemon.
6. Serve shrimp with linguine and top with freshly grated parmesan cheese.
