Meatloaf w/ Corn Salad
Sorry I don't have a picture but everyone knows what meatloaf looks like. This is super yummy!
1 1/2 lbs. ground beef (93/7)
1/4 cup ketchup, plus more for top.
2 eggs, beaten
1/2 dried bread crumbs
1 envelope of Ranch dressing
1/2 onion, diced
1. Preheat oven to 350 degrees and spray a 9x5 meatloaf pan with cooking spray.
2. Mix all ingredients together until well combined.
3. Put into a meatloaf pan and drizzle the top with ketchup. Lightly cover with foil.
4. Bake for 50 minutes, remove foil and continue to cook another 10-15 minutes or until brown.
5. Serve with mashed potatoes or I served mine with a summer corn salad.
