Summer Corn Salad
Wow, this is going to be a great staple in my house this summer. This salad is absolutely delicious! I served it with roasted salmon and a pasta/rice medley.
Serves 4
3 cobs of corn
2 small cucumbers, chopped
1/2 red bell pepper, diced
1/2 small onion, diced
feta cheese, crumbled
5 small yellow cherry tomatoes, chopped
fresh basil, chopped
salt & pepper
Dressing:
2 tablespoons grapeseed oil
2 tablespoons apple cider vinegar
1. Bring water to boil in a large pot. Add corn and cook for 5-7 minutes. Drain and cool for a few minute.
2. Cut corn off cob and add to bowl with cucumber, red bell pepper, onion, feta cheese and tomatoes.
3. Mix oil and vinegar together and right before serving add the chopped basil, oil & vinegar, salt and pepper to taste. Serve!
