Buttermilk Cayenne Cheddar Biscuits


These biscuits are delicious and very easy to make.  I made a breakfast sandwich using bacon, cheese and a fried egg however you could just eat them with nothing and be a very happy camper.  I suggest make these today and start your diet tomorrow.

Ingredients
  • 3 cups All-purpose Flour, Plus More For Dusting
  • 1/3 cup Powdered Milk
  • 5 teaspoons Baking Powder
  • 1 Tablespoon Sugar
  • 2 teaspoons Cream Of Tartar
  • 2 teaspoons Kosher Salt
  • 3/4 teaspoon Cayenne Pepper
  • 1 stick (1/2 Cup) Cold Salted Butter, Cut Into Small Cubes
  • 1/2 Cup shortening
  • 1 cup finely grated Sharp Cheddar Cheese
  • 1-1/2 cup Buttermilk
  • 3Tablespoons Salted Butter, Melted
Preparation
Preheat the oven to 450 degrees F.

Whisk together the flour, powdered milk, baking powder, sugar, cream of tartar, salt and cayenne pepper in a medium bowl. Using a pastry cutter, cut the butter bits and shortening into the dry mixture until blended thoroughly. Mix in the cheese, then fold in the buttermilk until the dough comes together.

On a lightly floured surface, turn out the dough and press into a circle 1 1/2 inches thick. Cut out circles with a biscuit cutter or a glass. Place the biscuits in cast-iron skillets, then brush the tops with the melted butter. Bake until golden brown, 12 to 15 minutes, then set aside to cool a little. 

To make a breakfast sandwiches: Cut biscuit in half and add either cooked bacon strips or a sausage patty, fried egg and cheese. Wrap biscuit in aluminum foil to keep warm and melt the cheese.
