Homemade Granola

This is a copycat recipe of Kimberley's Bakeshoppe Granola.  It's delicious by itself or served with yogurt for a hardy breakfast.
 
1/2 cup rolled oats
1/2 cup rice flour
1/2 cup dried fruit (raisins and dried cherries)
1/2 cup chopped unsalted nuts (walnuts and almonds)
1/2 cup unsalted seeds (sunflower, pumpkin and flax)
1/4 cup honey
1/4 cup brown sugar
2 tablespoons coconut or vegetable oil
1/4 teaspoon salt
1 teaspoon vanilla

Preheat oven to 300ºF. Line a baking sheet with parchment paper.

Mix together all of the ingredients in a large bowl.

Squeeze it with your fingers until clumpy and arrange in a rough circle in the middle of the pan.

Bake for 35 minutes or until slightly browned. Once cool, break into pieces and store in an airtight container.  Serve with yogurt or snack on it by itself.
