Mushroom & Onion Quiche

Here is the other quiche I made on Mother's Day 2013. 


Ingredients: 

2 tablespoons unsalted butter
1 onion, thinly sliced
1 box of white mushrooms, sliced
6 eggs, slightly beaten
1/2 cup heavy cream
1 cup milk
4 oz. crumbled goat cheese
1/2 cup shredded parmesan cheese
salt and pepper to taste
1 uncooked pie crust

Preheat oven to 375. 

In a medium skillet, melt butter and add onions and mushrooms and cook for a few minutes.  Add salt and pepper to taste. 

In a large bowl, beat eggs with cream and milk. Add onion/mushroom mixture, parmesan cheese, goat cheese, salt and pepper and stir together. 

Pour into prepared pie crust and bake for about 1 hour or until no longer jiggly in the middle.  Remove from oven and allow to cool 10 minutes before cutting and serving.
