Man-Pleasing Chicken
I found this recipe on Pinterest, my new recent obsession, and I have to say it was very man (and woman) pleasing. Serve it with rice, quinoa or mashed potatoes.
Serves 4
Ingredients:
1/2 cup Dijon mustard
1/4 cup maple syrup
1 Tablespoon rice wine vinegar (could use apple cider if you won't have rice wine vinegar)
6 boneless & skinless chicken thighs (about 1 pound)
Fresh rosemary (optional), finely chopped

Put the 6 chicken thighs
into an oven-proof baking dish. Then, salt and pepper the thighs. Pour your
maple mustard mixture over them, turning the thighs in the mixture so they are
fully coated.
2. Cover dish and marinate in refrigerator for up to 4 hours. This step is optional.
3. Preheat oven to 450 degrees. Put the chicken thighs into the oven, and let them bake for
40 minutes or until a meat thermometer reads 165ºF. Baste the tops of the
chicken with more sauce half way through. I find that a meat thermometer is
essential in cooking because it allows me to check for doneness without cutting
into the meat and losing its juices.
4. Let the chicken rest for 5
minutes before serving. Plate
the chicken, making sure to spoon some extra sauce over the top. Sprinkle over
some fresh rosemary.
